It is friday evening and I am really happy about all the visitors I have had since the blog went on air yesterday evening. I have had over 500 visitors already. 🙂 In Denmark it is very normal to eat candy while watching Disney show every friday evening. My daughter who is 3 years old knows what candy is now, and she have tryed to taste it a few times. When the other kids gets candy she can also have some, cause I don’t want her to feel different from the others. But we try to make the candy at home in a healthy version. So tonight I made these zucchini/eggplant chips. Wow. They tasted to wonderful, and I really don’t need normal chips again after these:) And my daughter: She loved them. It is so nice when you can have your kid eating vegetabels instead of sugar!

Here you have the recipe:

  • Cut zucchini and eggplant in thin slizes (as thin as you can).
  • Spread them out on a griddle (with some paper underneath).
  • Put macadamia oil, barbecue spice (I use one from the Danish brand Urtekram without sugar) and a little bit of salt over and put it in the oven for one and a half hour on 110 degrees.

Yum yum and serve them with your favorite dip.
